To maintain a healthy lifestyle and to prolong the longevity of my kidney transplant, I incorporate renal-friendly food into my diet. I wanted to change it up a bit and decided to purchase the AAKP Delicious! Recipe Card Series- 5th Edition which has 36 recipes consisting of meals, snacks, and desserts that seems too good to be considered renal-friendly let alone healthy! I decided to make the Spiced Pear Muffins first because they would be great for breakfast and they would appease my sweet tooth! Pears were one of my go-to low potassium treats while I was on dialysis. These muffins are suitable for those who are on dialysis as well.
I had the majority of the ingredients on hand since they were basic baking staples. I only had to purchase the two stars of the recipe: Canned pears and pumpkin pie spice. After 30 minutes of prep and cook time combined, I had soft, tasty muffins in cute fall-themed shapes thanks to an Autumn-themed baking tin.
I admit I was a bit skeptical as to how they would taste because I am not "Team Pumpkin Spice," but I did enjoy the combination of the spice and pear flavors. These are great warm or room temperature.
